RadiatoriĀ are small, squat pasta shapes that are said to resemble radiators. Although it is rumored that they were created in the 1960s by an industrial designer, their invention was actually between the First and Second World Wars. They are often used in similar dishes asĀ rotelleĀ orĀ fusilli, because their shape works well with thicker sauces, they are also used in casseroles salad, and soups. The form is sometimes called pagoda pasta. Radiatori somewhat resembleĀ rotiniĀ in shape but are generally shorter and thicker with a ruffled edge, circling the pasta.Ā They are modelled after an old industrial heating fixture,Ā having a straight ā€œpipeā€ withĀ concentric, parallel fins. Their design creates hollows to trap sauce.

Sabbiatos pasta is made from 100% select durum wheat semolina flour.Ā 

For Authentic "al dente" pasta, lightly salt pot of water and bring to a boil. Add pasta and stir occasionally. Test after 9 minutes for desired tenderness. If needed allow one more minute of cooking. Pasta should have a slight firmness when bitten.Ā
